Sesame, Chocolate Nut and Coconut Clusters: Three sweet ways to say “I LOVE YOU”

From my kitchen, Simple make – ahead recipes for Valentine’s Day…with a word of caution… because in our home we believe EVERY day is a PERFECT day to say “I LOVE YOU ” , the make-ahead idea was an epic fail….gone in minutes and  looooong before February 14. Have extra ingredients on hand. Consider lock and key after you make yours!

Set your oven at 350 F. Choose your cluster recipe.

Once you’ve mixed your chosen recipe drop the mixture by tablespoons about 2” inches apart on a parchment lined cookie sheet. Bake for 12-15 minutes. Remove from oven .  

Let cool for 40 minutes. Do NOT touch them, or even think about it. Walk away. This is the most difficult part of these recipes. You will want to eat them pronto. They smell divine.

  Sesame Clusters

  • ¼ cup sesame seeds
  • 1 ½ cups unsweetened shredded and flaked coconut
  • ¾ cup slivered almonds
  • ⅜ cup pure maple syrup poured over all and mixed well
  • Bake as directed above.

  Chocolate Nut Clusters

  • ¼ cup  peanuts
  • ¾ cup mixture of almonds, cashews, pecans
  • Option: some raisins, currants, craisins or diced dates can be added too
  • Mix well  ½ cup cocoa powder + ½ cup pure maple syrup and pour over the nuts. Stir well. Bake as directed above.

  Coconut Clusters

  • ¼ cup chia seeds
  • 1 ½ cup large unsweetened coconut flakes or strips
  • ¾ cup pumpkin seeds
  • ⅜ cup pure maple syrup poured over all and stirred well
  • Bake as directed above.

Find your lock and key. Store at room temperature.

Note: The photos are “decorated “ for presentation  with pure maple syrup and chocolate sauce.

My own chocolate sauce recipes are simply good quality cocoa powder + pure maple syrup OR cocoa powder + local honey + a little water so it flows. If you want it really chocolate-y add a little more cocoa. These chocolate sauces work great on ice cream or for hot chocolate.
